The Vanilla Coffee Slushie

For as long as I can remember, I have never been much of a coffee person. I used to drink it out of pure mischief when I was younger because I wasn’t allowed to but honestly, I never actually liked it. Recently though, I’ve started enjoying it and it’s for a number of reasons but the main one is really just that I’ve learnt how I like to drink coffee and I can make it enjoyable for myself. Having it iced is now one of my favourite ways and I’ll show you the quick way I make it.

You Will Need:

150ml hot coffee (this can be instant coffee, espresso, filter coffee, just make sure it’s fresh and warm)

1/2 tsp vanilla essence

1 1/2 cups oat milk (or any plant milk you like)

2 cups ice cubes

1tbsp brown sugar (or to taste)

tiny, tiny pinch of salt

 

Method:

Dissolve brown sugar, salt and vanilla essence into coffee to make a concentrate

Add concentrate, ice and oat milk to blender and blitz until the mixture is slushy

Pour into a glass and enjoy!☕

The Eggless French Toast

I’ve been craving some classic french toast quite a lot lately, drenched in syrup and coated with a light dusting of icing sugar. Most recipes online are like “oh, it’s super easy just use this egg replacer” or “just dip your bread in a banana smoothie” (???) which is fine but 1. where do I get egg replacer? and 2. no.

I figured out an alternative that’s easy, doesn’t require any specialty ingredients (my favourite kind of recipe) and gives you PERFECT FRENCH TOAST. Its crunchy on the outside, moist inside and if you use the right bread, you’re gonna get soft fluffy bits all over and its glorious. Here’s how you make it!

You Will Need:

2 slices white bread
8tbsp soy milk
1tbsp cornflour
tiny pinch of salt
2tbsp oil (for cooking)

NOTE: You can, of course, add any additional spices to your wet mix that will make this recipe more delicious for you. These are the essential ingredients so start here and let your imagination run wild! I think protein powder could be cool to add to this!

Method:

In a shallow bowl, whisk together soy milk, cornflour and salt until dissolved and well combined

Place bread into the soy milk mixture, ensuring both sides of the bread are coated in the mixture

Heat oil in a pan on low heat

Place coated bread in pan and cook each side for 4-5 minutes

Serve with syrup and a dusting of icing sugar, or however you like!
